You need:
- Cut and fry potato, parsnip, celery root, carrot, onion in a pot,
- Add Garlic, Ginger to the pot.
- Add eggplants, chickpeas, cauliflower
- Add ground cumin, 2 tsp coriander
- add vegetable stock
- put in the oven for about half an hour
