Special Lamb Shank Recipe- In a Stone (Granite) Mortar
, crush Chili,
Coriander,
Oregano,
Salt and Pepper,
then add 1 tsp Flour. Then rub it all over Lamb Shanks.
- Fry Lamb Shanks in
Extra Virgin Olive Oil until golden and crispy.
- Set aside and leave oil in a pan for frying carrot, onion and celery.
- Dice Celery,
Carrots,
Onion, then fry then in oil.
- Put in a pan ; Rosemary,
6 Anchovie Fillets,
4 tsp Balsamic Vinegar, White Wine Vinegar
, then Tomato Paste.
- Put the Lamb shank back in a pan then put it in the oven for about 1-2 hours.
